I'll need to keep working on those pies...John,

I'll need to keep working on those pies before they're even close to qualifying as the best in any category.

One major difference between this current batch of pies and the beef pie I'd done last year is that, last year, I had made an awesome yuksu, i.e., beef broth, through a slow-cooking process. This time, I rushed it with some bouillon. Won't make that mistake again.Kevin Kimhttps://www.blogger.com/profile/01328790917314282058noreply@blogger.comtag:blogger.com,1999:blog-5541500.post-43404719273144532332020-05-19T12:54:15.630+09:002020-05-19T12:54:15.630+09:00This comment has been removed by the author.Kevin Kimhttps://www.blogger.com/profile/01328790917314282058noreply@blogger.comtag:blogger.com,1999:blog-5541500.post-88343063699696572772020-05-19T10:31:14.290+09:002020-05-19T10:31:14.290+09:00Beer is more of a flavor-enhancer, I think. If you...Beer is more of a flavor-enhancer, I think. If you can actually taste the beer in a stew or pie, that would be an indicator to me that there was way too much beer in it.

Also, the kind of beer matters as well. If you just dumped a can of Cass in there, for example, you're not going to taste anything. But if you dumped a bottle of bourbon-barrel-aged stout in there, that might be a different story. I imagine that it still would not jump out at you, though.Charleshttp://www.liminality.orgnoreply@blogger.comtag:blogger.com,1999:blog-5541500.post-78128160076340197672020-05-19T06:40:09.474+09:002020-05-19T06:40:09.474+09:00Perhaps you have discovered another possible retir...Perhaps you have discovered another possible retirement vocation! (I did add dried onion flakes because I hate regular onions, but that wasn't enough, apparently.)Kevin Kimhttps://www.blogger.com/profile/01328790917314282058noreply@blogger.comtag:blogger.com,1999:blog-5541500.post-63789134577420504532020-05-18T21:49:25.356+09:002020-05-18T21:49:25.356+09:00They look really good. They look really good. The Maximum Leaderhttps://www.blogger.com/profile/16049183891152402775noreply@blogger.com
