Disaster is the best description for yesterday's cake effort. It was a dense, ugly mess. While I'm tempted to throw the cake away, I'm going to make like the NTSB and poke around the wreckage a bit to determine what went wrong.
It was pretty disgusting. Poor Sean couldn't eat a second piece. I'm almost positive the problem had mostly to do with my having replaced a dry ingredient with two wet ingredients. I can't get into specifics without getting into the secret rum cake recipe, but in retrospect, I should have seen this disaster coming.
I may salvage the cake the way I once did with shoofly pie (a dessert I can't stand): by mushing the cake down into a flat crust, then pan-frying it until one side gets crispy and caramelized-- a perfect landing pad for ice cream.
Hmmm, yeah, switching wet and dry ingredients can be disastrous. But I wouldn't want you to give away the secret recipe, so I guess that means a detailed autopsy is out.
Someday I will have to try one of these fabled rum cakes for myself and see if they are indeed bombtits.
(This word, by the way, makes me think of the breasts on certain video game characters... like, for example, the non-pornographic but most likely not safe for work image here:
