July 4th sides

Brian Lagerstrom has some very good ideas for July 4th sides:

I'll be doing my own sides, but the above are pretty good. I decided to swap out mashed potatoes—given the number of carbs already on offer—with Korean veggie sides like ssam-mu, oi-muchim, and kimchi. The more I thought about my boss's bizarre wish to have L.A. galbi (thick-cut, Korean-style beef short ribs) on July 4th, the more convinced I became that the galbi couldn't be served alone with a pile of American food. 

My updated menu for Monday:

1. L.A. galbi with banchan (the collective name for the aforementioned sides)
2. pulled-pork sliders w/cole slaw
3. pulled-beef sliders w/cole slaw
4. corn on the cob—buttered and seasoned (boss will bring the corn)
5. mac and cheese (Mike Symon-style)
6. baked beans
7. apple pie (or as Cartman calls it, eppel peh)

Part of me wants to do burgers and dogs as well, but that'd be too much food, and we already did burgers and dogs a short while ago. Pictures coming soon.

  1. It just seems that it is the extreme fringe of both parties that get the attention and the rest of us are ignored and marginalized. I saw some poll recently that showed mainstream Dems reject the extreme "woke" agenda similar to the right's views. I think rational folks on the right are not going to buy the anti-gay marriage, zero abortions push by the right-wing crazies either.

    Maybe there is still hope for some sanity to prevail.
