My Korean coworker has been eating his way through my yeast-dough keto baguettes since I don't like them. He seems perfectly okay with them, which baffles me. I'm never going to make that particular bread again, but I do plan to make variants of it to see whether I can eliminate the bitter taste. Even if those experiments succeed, I'll keep making my soda-bread baguettes because, well, I love them that much.
There may be photos of a soda-bread batch tonight. Stay tuned.
ADDENDUM: my iHerb order of more oat fiber and vital wheat gluten makes I can try making more yeast-bread variants over the weekend. We'll see how that goes.
