keto fried rice

Keto fried rice!

I riced my cabbage in the food processor, then dried it somewhat in the oven—30 minutes at 50ºC (122ºF), a 30-minute rest to let the cabbage evaporate, then 40 minutes at 75ºC (167ºF), enough to drive out most of the rest of the moisture and to start a bit of a Maillard reaction on the top surface (I used my oven's top burner). I chopped up and fried my proteins—shrimp, scallops, spam, and eggs—and minced my carrots and pyogo (shiitake) mushrooms, fried everything up, added peas (not fried), then tossed the veggies into a big bowl with the proteins. Lastly: with almost all of the ingredients together, I added soy sauce and a bit of sesame oil, mixed everything together, sprinkled minced green onions on top... then used my "rice" it as a base for Costco's "Indian chicken curry," which I'd bought yesterday (that's the label in Korean; maybe it's makhani chicken or just some kind of generic "curry/curried chicken"). The "grains of rice" are barely visible, it seems! Not that I mind. The fried "rice" was delicious, but I'm not sure that it worked as well as it could have as a base for the Indian chicken. The meal wasn't bad, but it wasn't spectacular, either. Not to worry: I'll eat both dishes separately in the future. I also bought shabu beef and gom tang bone broth, so that'll be a keto meal in a few days.

I had ordered the green onions, shrooms, carrots, and peas from Coupang.

The proteins came from my downstairs grocery. Today (Sunday), I had to go out and get the cabbage, which I'd forgotten to order. The head of cabbage I bought was freakishly huge, as cabbage heads often are in a country that loves cabbage-related food (NB: kimchi uses Napa cabbage; today's cabbage was yang-baechu/양배추, or "Western" cabbage). I have so much cabbage left that I'll be making both cole slaw and quickie sauerkraut (which will probably end up on keto hot dogs).

They use thighs. It's pretty good, but lacking that tandoor char.

I've sprinkled the green onions onto my "rice."

The final meal: chicken on top of fried "rice" in a weird Indo-Korean fusion.

I'll give the meal a 7. Good, not great. Both dishes eaten separately would've been better.
