Lagerstromian fish and chips

I'd eat those. I've also noticed a lot of pushback against cod, on YouTube, in favor of haddock. Apparently, haddock is the go-to fish for a lot of English chippies.

  1. I don't know much about fish, but here the options are dory and mahi mahi. Mahi is more expensive, but the fish and chippies prefer it. I like it better, too. It is firmer somehow.

    1. I'm a huge cod partisan myself (the classic), but I've used other, smaller whitefish like tilapia, which works pretty well for frying but isn't nearly as meaty as cod.

  2. I've never had dory or mahi in fish and chips. I imagine mahi would be quite good. (I don't know if I've every eaten dory at all.) I am very fond of cod. It is my favorite in fact. Tilapia is okay, but generally too think to work right. I think tilapia just gets lost in the batter. As for haddock, it is the primary choice in the UK. Haddock is more abundant around the British Isles than cod. But the real problem is finding a chippie. They seem to be fast disappearing.

    1. You probably wouldn't have persuaded your brother-in-law to go. Too low- or middle-class. When we do the Camino, we should stay with Dominique a bit, then do a bit of England and Scotland. You and I will hit some chippies then.
