delay!

My Korean coworker suddenly has to take his daughter to the hospital tomorrow, and my boss—who hasn't been in at all this week—is probably not coming in tomorrow, either, so the date of our luncheon has been moved to next week, January 21. I can freeze the meat sauce, and my frozen peas will remain frozen, so the dilemma is what to do about the carrots and potatoes. I Googled the question of freezing mashed potatoes, and the consensus seems to be that you can freeze them fine as long as they're full of fat (butter, cream, cheese), which mine definitely will be; I know that potatoes, when frozen alone, can get mealy. The carrots I bought might last another week in the fridge without going bad; carrots are usually tough. But if they don't make it to next week, for whatever reason, I can just buy more at our downstairs grocery. Carrots are not only tough: they're also fairly cheap when you buy only a couple at a time.

So that's the new plan. Luncheon next week.

UPDATE: moved the luncheon to this coming Monday, which solves storage problems.
