birria lasagna

Birria became trendy a while back, and I've still never tried anything birria. I'm not even sure where I'd look for birria tacos in Korea, so most likely, I'm going to have to make everything myself. Below is a video of a clever twist: birria lasagna. Want. Despite the Béchamel.

I had a pang when I saw people going around maskless (except for the butcher), and strangers were hugging strangers with no fear of contagion. Korea needs to wake up and dump the indoor-mask mandate. Life needs to get back to normal.

  1. I didn't watch the video, but I did read your link to learn what birria means--I had no clue. I found the adobo reference particularly interesting because various meat adobos are a staple of the Filipino diet, including goats (and I'm told sometimes dog meat).
