ReplyDeleteThese were better than last time's burgers. Right before I started cooking, I found a dude on YouTube whose "secret" for making his burgers involved adding mayonnaise to the ground beef. That turned out to be a good trick for smash burgers because the oily mayo helped the beef to spread out more thinly when I flattened it. The burgers also ended up a bit juicier. Just go gentle with the salt and pepper. The only disadvantage with the mayo: the burgers tended to crumble when flipped, so use a pan or griddle, not a grill. (As you know, smash-burger patties tend to crumble anyway, so it's not tragic, especially once you layer on some cheese to help hold the patties together.)
