poor man's choucroute alsacienne

Choucroute alsacienne, also called a choucroute garnie, is a German-influenced Alsatian French dish composed of various meats like sausages, ham, and possibly bacon as well as potatoes and sauerkraut (the choucroute in question). In using up a bunch of freezer items, I threw together two types of humble hot dogs, deli-sliced ham, Korean "streaky" bacon (the British term for what Americans just call bacon), and homemade "quick" sauerkraut (from Brian Boitano's recipe). Conspicuously absent from my dish: potatoes. This preparation might barely qualify as "dirty keto," but I'm pretty sure the hot dogs had carbs, as did the Korean whole-grain mustard. Overall, though, despite its shortcomings, the meal wasn't awful at all. And I've got leftovers for tomorrow.

Yes: I put lardons in my sauerkraut.

I also made a batch of coleslaw—the mustard-vinegar kind, not the cream-mayonnaise kind. I'll be slow-cooking some pork and baking Victoria's keto bread to make keto pulled pork as well as keto burgers (I have skirt steak that I'll grind up tomorrow). I'll also make some chili for the dogs, and maybe also for the burgers since chili burgers are a thing these days. Which reminds me: I need to buy pickles and cheese (for the burgers, not the dogs). If I have enough leftover hot-dog buns, I might get some seafood and make "lobster" rolls as well.
