Joshua Weissman's 50 Food Mistakes

How many of these mistakes do I make?

Some kind commenter gamely listed the errors with time stamps, allowing me to comment on them. My comments are in red:

I am now master of the filet mignon. 0:46 cook with acid Not a problem for me. 1:13 wait on adding garlic Not a problem for me. 2:02 don't overcook veggies Generally not a problem for me. 2:43 use sharp knives I'm a slob about this: I need to sharpen all of my knives. 3:26 use enough fat/salt Not a problem for me. 3:47 clean as you go I'm OK doing this, but I could do better. 4:10 constantly stir food Not to the extent that Joshua shows. 4:45 proper food storage Not a problem for me. 5:11 clean knife after every use I'm normally pretty good with this, but not always. 5:31 use the right pan Not a problem for me. 5:56 toast deez nuts & spices When I remember to. 6:14 how to crack an egg Not a problem for me. (Thanks, Alton Brown.) 6:31 pre-measure recipe ingredients I could get better with mise en place in general. 6:53 box directions are suggestions Not a problem for me. 7:16 don't overhandle food Not a problem for me. 7:44 keep tools near you I'm normally good, but I could improve. 8:13 set a timer before walking away Always, and religiously so. 8:31 cut your own veggies Mostly. 8:55 soften butter when called for Not a problem for me. 9:10 proper cutting board material Charles convinced me to switch to wooden. 9:40 don't use oil in pasta Not a problem for me. 9:56 don't use soap on cast iron The only cast iron I own is covered in enamel. 10:27 precise measurements Not a problem for me. 10:49 wash rice Never a problem for me. 11:22 don't use apron as towel/oven mitt ??? 11:32 make your own stock Not a problem for me. 12:03 don't start steak in butter Not a problem for me. 12:27 carry-over cooking With the food I normally cook, this is rarely an issue. 12:43 don't add ingredients at same time Not a problem for me. 13:05 don't rinse cooked pasta Not a problem for me. 13:25 grind your own spices I'm getting better with this one. 13:40 don't substitute ingredients Generally not a problem for me. 14:06 temp control Generally not a problem for me. 14:29 mince your own garlic I buy ground garlic and have no problems with it. 15:05 parchment paper in (cake) pan Not a problem for me these days. 15:48 use a time when baking Not a problem for me. 16:05 don't use metal in non-stick pan I forget sometimes. 16:17 use the correct fat for the job Not a problem for me. 16:38 seasoning pasta water Not a problem for me. 16:59 use enough oil when searing Not a problem for me. 17:21 reduce sauces properly I'm getting better. This requires patience. 17:48 taste as you cook Not a problem for me. 18:21 rest protein after cooking Not a problem for me. 18:34 pre-heat pan/oven Not a problem for me. 18:50 which salt to use Not a problem for me. 19:25 wash produce Not a problem for me. 19:42 don't oil grill grates This one's not relevant since I'm in an apartment. 20:00 check all appliances when done Not a problem for me.
