food-prep progress report

Looks as though I'll be doing most or all of my final food prep tomorrow. The quiche filling is done and ready to go—both the solid part (sausage, ham, cheese, mushrooms, spinach, onion flakes, herbs, seasonings—already smells awesome) and the liquid part (savory custard: cream, eggs, salt, pepper, garlic powder). The apple-pie filling is almost done; I merely need to peel, chop, and cook down two more apples to make the bulk of the pie filling a bit less sweet. I also made tzatziki and a bit more of the Middle Eastern-style lemon-tahini dressing that's supposed to go with the salad (tzatziki is there mainly as an alternative). And the farro for the salad is done and containerized. To be done tomorrow: (1) prep the pie shells for both the quiche and the apple pie, then make both; (2) make and bake a small batch of almond-flour cookies; (3) bake the quiche and the apple pie; (4) prep the salad and pack it up so it's ready to go. Salad prep shouldn't take long, but I do have to pan-fry the chickpeas in my Middle Eastern spice combo. Still, that's only a matter of a few minutes. I might actually wait to do the salad early Saturday morning, then pack everything else up and leave by noon to arrive at my boss's palatial apartment in Suwon by 2 p.m. 

So—no photos tonight, but there will be pics tomorrow. Sorry.

Other news: in four days, I pay the rest of my apartment's deposit (W9 million) plus my first month of rent—W735,000. Double whammy. In early March, I expect I'll also get a utility bill, which I'll pay separately to the building, not to my landlady. Yay. This is the first major blow to my battleship-sized bank account, which is stocked with money amassed since 2020, when I paid down my scholastic debt; after February, it's a matter of being nickled and dimed for several months until I've gotten my F4 renewed, at which point I'll likely be moving down to Suwon to an apartment that's bigger and cheaper (but also much older). I'll get my W10 million deposit back, but I'll still be minus W735,000/month plus utilities, everyday expenses, and special expenses. Although there's no immediate emergency—and there won't be for a while—I'll feel more secure if I can make money during the interim. More on that soon.
