lesson learned

So I made a keto egg-sausage-cheese breakfast "frittatoid" the other day:


What you're not seeing is the mess that was left on the surface of the metal pan: the pan's metal was thin, and the eggs and cheese baked hard onto the pan, making a nice, shielded layer of gunk that, even after four days of soaking, would not come off via silicone spatula or kitchen-sink scrubby pad. After all that soaking, I got desperate and tried using my fingernails. Et voilà! It worked. So I fingernailed about 60% of the gunk off, then got out a fresh, mean-looking, dark-green scrubby pad (all scrubber, no sponge) and went to town on the rest. The remaining gunk came off more or less obediently, although mopping up the final remnants required a careful eye: I kept finding little, unscrubbed bits clinging stubbornly to the pan's metal surface. Eventually, though, I scrubbed the whole thing clean.

So—lesson learned: butter or grease the pan when using it to bake a frittatoid.
