Gumbo!
Damn, I've been jonesing for some gumbo. It wasn't meant as a winter food (Louisiana isn't exactly known as a wintry state), but gumbo is, in fact, perfect for those winter months. So I'll be making gumbo for the first time since 2020, buying ingredients this weekend, making my homemade andouille first, then doing a lot of chopping and prepping before I finally throw everything together and make the actual gumbo. Accompanying the gumbo will be some classic cornbread. I saw a recipe for "Cajun cornbread," but the comments beneath the recipe (under-seasoned, needs sugar, etc.) convinced me that classic was the way to go. So expect pictures of the making-of and the serving-of next week, around the 26th.
