Serious Eats: subscribed

I just discovered that Serious Eats, with Kenji López-Alt (KLA), has its own YouTube channel, so I've now subscribed to it. KLA, somewhat in the spirit of Alton Brown, takes a fairly food-science-y approach to crafting his dishes. This results (as happens with Alton Brown's cooking) in procedures that often have ten too many steps in them (this bolognese video is a good example of what I mean, and so is this "Ribby McRibface" sandwich video), but the results are undeniably gorgeous.

Anyway, here's something that looks potentially addictive:
