keto cornbread, here we come

I was expecting this to reach me by late May, but my corn extract from Amazon has arrived! I didn't even know corn extract existed at first. I was thinking about keto cornbread, and how corn isn't keto, and that's when the thought struck me: what if there's a such thing as corn extract that you can use to flavor up a "cake" or "bread" made primarily from almond flour? And sure enough: corn extract exists! You can definitely make a "cake" or "bread" that is roughly the consistency of cornbread from almond flour. Once I had tracked down and ordered the corn extract, I went looking for some plausible keto cornbread recipes. Do keep in mind that sweetened keto foods like cheesecake, cornbread, "apple" pie (made with jicama), etc., do still contain a lot of carbs, so you can't sit down—as I might—and eat an entire cake for yourself. At best, you're having a slice or two, and you're either eating the rest over several days, or you're sharing your keto creation with open-minded friends.

My buddy Charles gave me a recipe for brownies that he said could probably switch out regular flour for almond flour, so at some point, you might see some keto brownies as well. With the weather warming up, mail delivery of chocolate becomes a difficult proposition; some services even refuse to deliver chocolate at all once the weather gets hot, and you need chocolate chips or chunks for brownies in my opinion. A possible substitute for shipped chips is store-bought dark chocolate (available at the SSG Food Market); over 70% cacao is safe for keto purposes. Charles's brownie recipe calls for walnuts, which are considered excellent for keto, but I prefer macadamias which, while not quite as good, are still on the "very good" part of the keto nut spectrum.* So look out for keto brownies and cornbread.

I saw my reflection in the bottle, so I mosaicked it out.

The plastic sealant/wrapping around the top of the bottle is obnoxious.

*The tastiest nuts are, of course, the bad ones. This would include peanuts (technically a legume), cashews, pine nuts, and pistachios. On the good end of the spectrum are Brazil nuts (huge and boring), walnuts, and macadamias.

  1. Never even knew that sort of thing existed. You've taken it to a whole other level--cornbread without the corn. Looking forward to seeing how that turns out.

  2. One caveat: I've never actually tried the brownie recipe with almond flour. But given how brownies do not have any gluten structure or need to rise at all, I figure it should work. I will be interested to see how they turn out when you get around to trying.
