I thought of an apple-based dish that ChatGPT didn't: apple waffles. Based on apple pancakes, of course. I have a waffle maker, one of those individual ones that work well with single people, but using that to make waffles for three will take a while even if I reduce the cook time for each waffle (resulting in softer, more flexible waffles that'll need pan-frying). So I think the three apple dishes I'll be doing are: (1) apple pie (naturally), (2) apple waffles, and (3) apple-Brie quesadillas, which sound amazing. I could stick some deli ham into the quesadillas, too: pork goes well with both cheese and apples.
Short week coming up thanks to the lunar new year: the Year of the Dragon. Bad weekend for travel: roads and rails will all be clogged, so any distance walking I do will be more or less local: no express buses for a while. Seollal (New Year's Day*) is on the 10th, a Saturday, so we have Friday and Monday off.
We might also be getting March 1 off; that's the day South Korea commemorates its declaration of independence from Japanese occupation.

*Seollal is derived from Seol-nal, where nal means "day" and a pronunciation rule makes an n + l combination into a double-L; it's sometimes just called Seol, somewhere between with "sull" and "saul." The "eo" is never pronounced "ee-oh" as in "geo."
