I think I've finally found a seitan recipe that might produce something at least somewhat tasty. Last time around, when I tried making seitan from my own recipe (which borrowed liberally from several seitan recipes), the thing came out tasting like dog food. Nauseating. This time around, I'm hoping this recipe will produce better results. If it does succeed, and I'm able to make more-or-less legitimate gyros from the seitan, I might try springing it on some unsuspecting victims to see whether they recognize the faux meat as vegetarian. Could be worth a shot... as long as no one's gluten-intolerant.
