Today's lunch was pretty keto—chicken-and-shrimp curry in salad form:

Uncharacteristically small for me, too: a single shredded chicken breast and a handful of large shrimp. |
I forgot the crushed-almond garnish, so I nutted all over the salad:

For the creamy element, I used a combination of sour cream and mayonnaise. For seasoning, I relied on a combination of garam masala and curry powder. The dish was simple, but it kicked ass, and the fatty sauce was enough to quiet my satiety alarms.
I'll be doing this dish again soon. I had thought that this might accidentally be close to Coronation Chicken, but a Google Image search shows that (1) tomatoes are a very rare garnish with Coronation chicken, and (2) using shrimp turns this into a different animal entirely. So I'll have to make Coronation Chicken as a separate thing one of these days. (I already did cordon bleu in honor of King Charles III's ascension to the throne.)
