Ye gods!
You're hungry, you've just come out of a 72-hour fast, and you don't want to break your overall diet. So, what do you do? You throw stuff together. Seaweed noodles, bibim sauce, quail eggs, and gochu tuna, in this case (plus a sesame-seed garnish).
The noodles and proteins are pretty keto, but the bibim sauce and the tuna's gochu sauce are not. In the future, I'll need to find low-carb alternatives to the bibim sauce (suggestions welcome), and I should probably avoid gochu tuna altogether.
