Udong with chicken, shrimp, and egg in black-bean sauce:
This was a thrown-together dish done after 1 a.m. I used jjajang-style black-bean sauce, but I amped it up with sriracha and oyster sauce. The result was surprisingly delicious. I stir-fried the chicken in oil before tossing in a little soy sauce, then tossing in the shrimp and scrambled eggs. The noodles went in after the black-bean sauce, and then I sprinkled the minced green onions over the whole happy mess.
