Well, I did my final bit of shopping for the remaining items I need to prepare the upcoming office Thanksgiving meal. I'm going to start a massive amount of prep work tomorrow; it's like this every year. Unfortunately, I was unable to find some crucial items, so there are going to be, alas, some major, last-minute changes to the menu. SSG Food Market normally has cranberries all year long, but for whatever reason, the place had no cranberries yesterday. I got raspberries instead, and I'm going to see about making some sort of raspberry gelatin reminiscent of the sliceable cranberry sauce that comes out of a can. That, or I'll prep individual cups. Even more tragic was that I came up short in my search for turkey-breast meat. Normally, I head down the street to the John Cook Deli Meats branch near Maebong Station; the place has been a reliable source of turkey breast for at least two years. This year, though, for whatever reason, John Cook had no turkey breast except in sandwich slices. The guys behind the counter said they could order turkey and have it in time for Thursday, but I politely declined and said I'd go for chicken at the local grocery instead.
While part of me is chafing, part of me welcomes the challenge of providing something new for the troops. No one associates raspberry gelatin with Thanksgiving, and most Americans would probably prefer turkey to chicken on that day as well, but I'll do what I can to make the best of the situation. Raspberry gelatin, then, and for the main protein, a turkey/duck roulade with a spinach-cheese stuffing, dried cranberries, and roasted macadamias (no pine nuts at the local grocery). I think a simple brown gravy ought to go nicely with that.
