My buddy Charles already bakes soda bread, which is heavy and dense but really good, especially with a bit of butter. In the video below, Max Miller of Tasting History discusses the history of Irish soda bread:

  1. I actually just watched that. I was pretty excited to see it pop up in my recommendations. I think the only change I could make to my version to make it more "authentic" would be to try to find some genuine Irish flour. That might be a little difficult, though. Otherwise, it might be interesting to try making some supercarbonate of soda from baking soda, just to see what difference it might make.
