my Korean coworker doesn't know it yet, but...

I'm building a little care package for my Korean coworker. He'd been told by his doctor to get his blood sugar down, but like me, he gets cravings for things like bread—cravings that kick in the moment he's told what he can't eat. He and I had a good laugh about that. I've shown him two types of keto bread so far, and he's liked both (personally, I liked the soda bread but not the yeast bread), and he's inspired to try baking some bread himself. To that end, I've been gathering the hard-to-find ingredients he'll need to make the soda bread—stuff like whey-protein isolate, almond flour, xanthan gum, and even baguette pans if he wants to make baguettes (I found some 2-roll baguette pans, so he can make bigger keto "baguettes" than I can with my 3-roll pan). Once I dial in the yeast-bread recipe, I'll give him that recipe, too.

My coworker's on his own for easier-to-find ingredients like Greek yogurt (sold everywhere these days), Everything Bagel seasoning, and baking powder. I'll be curious to see the results of his baking efforts. (Not that I'm any sort of expert in a position to judge. I just know what tastes and feels good.) Maybe he'll deign to share some of his bread.
